1 cup Brown Sugar
1 cup margarine
1 teaspoon vanilla
1 teaspoon baking powder
1 cup oatmeal
1/2 teaspoon salt
1 cup white sugar
2 eggs
2 cups flour
1/2 teaspoon baking soda
1 cup coconut (Optional) you can also add nuts.
Mix together first five ingredients. Sift, flour, baking powder, soda and salt. Add the flour to the first ingredients then oatmeal and coconut or nuts if you're adding. Mix altogether and drop by teaspoon onto baking sheet. Bake at 375°F for 8 to 10 minutes.
